On-Trade Scotland - August 2008

With licensees often left scratching their heads as to how they can finish the week with a bit more cash in their own pockets, a recent study from marketing research firm him! has hopefully managed to provide a few answers.

This month’s cover story looks at the results of a two-year long study and we look at how incorporating some of the findings into your offering could improve your bottom line.

This issue also sees the latest instalment in our Family Focus series of articles with Coca-Cola Enterprises. With CCE’s trade communications manager Kenny Chisholm, we visited a licensed café in Glasgow that is so focussed on catering for all ages of clientele that some of the toddlers are on first name terms with the staff. This makes for a friendly venue and a high number of soft drinks sales.

We also continue our Wine Focus with Matthew Clark, visiting 99 Hanover Street in Edinburgh to look at the benefits of ensuring all staff are trained to a decent level in wine.

Our lead feature this month focuses on the resurgence of cocktails and we speak to many of the companies who supply the spirits and mixers used in many of the country’s most popular drinks. We also look at some of the more interesting cocktail recipes currently doing the rounds, that could provide a talking point - and profit opportunity - in your bar.

With the football season about to kick off in earnest, we preview what drinks brands will be promoting the English and Scottish leagues in pubs, and how licensees can ensure that their outlet fills up as kick off approaches. Elsewhere, we profile the pub dubbed Scotland’s first eco pub, we take a look at the liqueur sector, and how to save money in your kitchen by going green.
